I had some leftover baby potatoes from supper and needed to whip up a quick meal. I decided to make loaded baby potatoes, and here’s how it turned out.
In small individual baking dishes, I arranged the baby potatoes. I added red onion, bell peppers, and leftover chicken. Then, I mixed a bit of olive oil with pepper, onion, and garlic powder, and drizzled it over the potatoes. Finally, I sprinkled Mozzarella cheese on top and baked it in the preheated oven for 25 minutes. Done!
