Salt & Vinegar Chip Chicken


  • 7 chicken breasts
  • 1 bag of salt and vinegar chips, crushed
  • 1/3 cup pancake mix
  • 1/3 cup cornflake crumbs
  • Sprinkle of salt and pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder


  1. Prepare Chicken: Thaw the chicken breasts and gently pound them with a meat hammer until they reach a thinner consistency.
  2. Chip Coating: Crush the salt and vinegar chips until they form coarse crumbs.
  3. Create Coating Mixture: In a plastic bag, combine the crushed chips, pancake mix, cornflake crumbs, salt, pepper, garlic powder, and onion powder.
  4. Coat the Chicken: Individually add each chicken breast to the plastic bag containing the coating mixture. Seal the bag and shake thoroughly to coat each piece evenly.
  5. Preheat Oven: Preheat the oven to 325°F (163°C).
  6. Baking: Arrange the coated chicken breasts on a baking sheet. Bake in the preheated oven for 45 minutes, flipping the chicken over halfway through the cooking time to ensure even browning.
  7. Serve: Once the chicken is cooked through and has a golden, crispy coating, remove it from the oven. Serve these flavorful salt and vinegar crusted chicken breasts as a delightful main dish.
