Yes, we love balls in this house. These are chicken balls and they happen to be stuffed with pineapple. When you bite into them you get that sweet tasting pineapple and it is such a happy surprise. I make these chicken balls ahead of time and freeze. All I need to do is pop them in my simmering sweet and sour sauce and they heat up nicely while the wonderfully sweet and sour sauce thickens around the ball. Delish…
4 cups of ground chicken
1½ cups of breadcrumbs
juice from the can of pineapple chunks
pinch of salt and pepper
1 tablespoon onion powder
1 tablespoon garlic powder
¾ cup of ketchup
½ cup of vinegar
1½ cups of water
½ cup of brown sugar
2 spoonfuls of cornstarch
Mix all the ingredients together to make the chicken balls.
Drain your pineapple chunks and poke 2 or 3 chunks into each ball.
Bake on a cookie sheet for 40 minutes at 330 degrees turning to brown the other side.
Whisk it together in your frying pan.
Leave it on 1 and pop in your chicken balls.
Allow to simmer for about 30 minutes or so.
Stir it in and allow the chicken balls to simmer for another 20-30 minutes or so.
It is that easy and they taste so darn good it should be illegal and probably is in some countries but I can’t go there because I need these chicken balls in my life. haha
Serve with rice, fries and Enjoy
