As a special treat for our class, my teacher made us stuffed chicken breasts on the last day of finals and it was beyond delicious. I wanted to have it again and decided instead of turkey for our main meal, I decided that we would have stuffed chicken breast, mashed potatoes, carrots, and gravy.
One year for our Christmas meal we had homemade lasagna. When we were much younger we would have a cooked turkey dinner and then a cold plate for supper. Do you have the traditional hot turkey meal for dinner or supper still?
My Christmas tablescape this year included a wooden troff my husband made me. I added greenery, faux red berries, candles on a timer and a string of battery operated lights. My red and white plates came from the Dollarama. They were a Christmas gift I bought for myself because I really wanted them. The glasses and silverware were a gift from my mother in law. It was as if she read my mind when she made the purchase because I had really needed new ones as all the utensils I did have were mismatched or missing in action somewhere. I did remember leaving some in my desk at college.
I’m a lover of Christmas cake. My Aunt Barb from St. Lawrence made the cake in this photograph. She sells them yearly and have mercy, they are delicious. I really think she needs her own bakery. She comes up with tons of recipes. You can check out some of them at Recipe Rebels.
I can’t believe she shared the recipe she uses for her Boiled Fruit Cake with me and allowed me to post it online. Yum. One year she covered it with icing and I swear my Mom and I had a squabble over who got to eat more. We didn’t speak for 10 minutes to each other. 10 minutes is a lot of time when it came to us.
1 cup (1/2 block) Central Dairies margarine
2 cups white sugar
1 box raisins
1 lb cherries.. I use ½ red and ½ green
2 cups boiling water
2tspn. ground cloves
2 tspn. cinnamon
1 tspn. allspice
3½ cups flour
3 tspns. baking soda
Boil the first 8 ingredients for 5 minutes.
Let cool. This is very important. I usually boil one day and bake the next.
Add the flour and baking soda and mix well.
Pour into COLD. well-greased tube pan.
Bake at 275 for 2 hours. (I usually do 250 degrees)
What are you supposed to do when you have leftover stuffed chicken breast? Deep fry it, of course. The day before we had the stuffed chicken breast as our Christmas meal and instead of eating it for lunch the next day as is, we decided to deep-fry it and serve it with rice and home fries.
To make the coating we used
1 cup of flour
2 cups pancake mix
water enough to make a batter
Mix it together and dip the chicken into it. Place in an at temperature deep fryer until brown. Easy and delicious.
This buffet is a new piece in our kitchen. It is a dresser from our bedroom set however it is too big for the bedroom and doesn’t fit where I want it to go. I decided to keep it in the kitchen as I love the color, the low profile, and the drawers as it holds all the loose odds and ends. One drawer is for candles in case the power goes, another drawer for bills, receipts, envelopes, another for seasonal tea towels, one for my purged craft section and the rest, is overflow.
The mummer art was created by my husband which he sells online at Sweet Home Newfoundland. He also made me the sled and stained it in the same stain as the table he made me as well.
The gingerbread cookies were a premade package that I purchased and I honestly wish I would have bought more. They were so good. I purchased the Italian Cake at No Frills for $2. It is light and fluffy and great with a cup of tea.
I wanted gumdrop cake and didn’t have the patience to make a real one. I picked up a vanilla cake mix and added the gumdrops and while it was good, I remember now that I’m not a fan of gumdrops and it was cherry cake I had wanted and not gumdrops. Doh!
I chose a mixed fruit with icing loaf from Sobeys. The icing was good but the loaf was really tough.
We made a chocolate cake with buttercream icing and a shaved chocolate almond bar on top. It was probably the best tasting cake I had in years and it was even better as each day passed. I wish there was more.
