I had a little bit of hamburger meat left over from a spaghetti that I had froze for homemade pizza. I was tending to household chores and realized that it wasn’t 2pm, it was 4 and I needed to have a meal on the table by 5. I keep my diabetic Dad on a tight schedule. Even though he is on insulin he is still delicate and needs to eat at certain times.
I boiled the penne pasta and steamed a small container of whipping cream, mozzarella, a sprinkle of garlic and onion powder and another couple sprinkles of pepper together. Once the sauce began to thicken I drained the penne pasta and poured the cream over it. I sprinkled the left over hamburger meat on top and gave it a quick turn over. I placed it in the oven on 450 while I set the table and within minutes it was ready to go.
Easy, quick and Dad asked for more. Yeah me!
Boil the penne pasta.
Add 1/2 cup of Evaporated milk with 1 cup of mozzarella and melt in a sauce pan.
Chop green pepper into small chunks.
Once the penne is boiled you can drain it and place in a baking dish.
Sprinkle the green pepper over the top.
Sprinkle the red pepper flakes on top. Use as much as you personally like.
Pour the cheese sauce over the top.
Sprinkle with bread crumbs and bake for 20 minutes on 350.
Serve to your hungry boys.
I used 1 loaf of frozen dough.
Remove from the freezer.
Spray your dish with pam or butter it so that the dough does not stick.
Allow it to thaw.
Cut into pieces, form into round balls and flatten a little.
Lay them on a greased cooking sheet.
Allow to rise again.
Heat your oil.
Drop your donuts into the oil.
Turn over so both sides brown the same amount.
Remove from hot oil and allow to drain.
Put the donuts into the freezer.
I put them in the freezer to cool them quicker.
Put your whippy cream into a frosting bag.
Remove your donuts from the freezer.
Push the tip of the frosting bag into the donut and squeeze.
Once all the donuts have the cream inside you will need to melt the chocolate.
I used about half a cup of chocolate chips in a sauce pan over low heat.
Stir your chocolate chips until they begin to melt and remove from heat.
Dip your donuts into the chocolate.
Lay your finished donuts on a nice plate to cool.
Serve to your family who thinks you are quite brilliant.
I used left over Whippy Cream for the inside. Here is the recipe from the other day.
500ml whipping cream
5 tablespoons vanilla
2 cups of icing sugar
Beat all the ingredients together for about 5 minutes.
1 pack of Navy Beans
½ cup molasses
1 cup brown sugar
3 cups of water
sprinkles of pepper, garlic powder
3 strips bacon
Soak your beans in 3 cups of water overnight.
Mix your molasses and brown sugar together.
Sprinkle your spices into the mixture.
Pour your sauce in on top of the beans.
Mix with a wooden spoon.
Throw in your bacon,
Bake for about 40 minutes.
Remove from oven and mix again.
Bake for another 40 minutes.
Remove from oven and quickly turn the beans over.
Bake for another 30-40 minutes.
I normally bake on about 200 degrees though which means the beans will need another 40 minutes in the oven.
red onion flakes
Boil the gnocchi with a pinch of salt.
Place the mushrooms, sun-dried tomatoes, grape tomatoes in a skillet and allow to simmer on 4 for about 10 minutes.
Add the freeze dried chives and red onion flakes.
Drain the gnocchi and plate.
Spoon the mushroom and tomato mixture on top and serve.
4 boneless, skinless chicken breasts
¼ cup brown sugar
3 tablespoons paprika
2 teaspoon oregano
1 tablespoon garlic powder
Salt & pepper
1. Pour brown sugar, paprika, oregano, garlic powder, and salt & pepper into a plastic bag.
2. Add chicken breasts and seal. Shake to coat chicken.
3. Leave chicken in fridge for 1 hour up to all night to absorb flavors.
4. Preheat oven to 350 degrees.
5. Bake for 25 minutes on each side.
6. Allow chicken to sit and relax before serving.
Sun-dried Tomato Salad dressing
Boil your gnocchi for about 4 minutes.
In a saucepan with a little olive oil or cooking spray whichever you prefer, add the mushroom, red onion and the sun-dried tomato.
Add the grilled chicken.
Sprinkle with salt and pepper.
Once the gnocchi is cooked, drain and throw it in to the saucepan.
Pour about 1/3 cup of Sun-dried tomato salad dressing in on top and stir.
Remove from heat, plate and devour.
Cinnamon Sugar Touton Bites are a guilty pleasure. They taste delicious warm and will make your eyes roll back into your head. I swear. Give them a try. But only eat three. Well, maybe four, okay five, but seven is your limit. Got it? No more than ten.
You will need one loaf of bread dough.
Cut the dough into tiny bite-size pieces.
Allow to double in size while they lay on top of a warm oven.
Heat about half a cup of oil in a skillet on 4.
Add about 6-10 pieces in the skillet at a time.
Brown the toutons on each side.
Remove from the skillet and place on a paper towel to drain.
Mix one cup of icing sugar with 1/3 cup of milk.
Add a little water or extra milk and continue to mix until it is a runny consistency.
Add cinnamon and mix again.
Pour the icing over the toutons.
Sprinkle again with cinnamon and serve while warm.
